I see a lot of sword and board and mages in gameplay trailers, wondering if there's an option to roleplay as a thief? Similar to how skyrims thief play worked. Anyone have any experience?

Ranger might be what you're looking for. They have invisibility, bonuses to ranged stuff(I guess you'd pick bows overs guns here), 1H weapons(I think daggers are in the game?), etc.

I haven't played the game though so I don't know the specifics of how character building works there.

I have it downloaded on gamepass but idk, I'm playing the first Kingdom Come Deliverance and I feel like that's gonna be my game for a few months lol

Haven't played it but I heard the gameplay is very bland if you do not hybrid mage into your non-mage build. So pretty much every build is mixing magic use in there just to make the combat not be boring. Which is probably why you see a lot of magic users.

Ranger is the tree for that style of play. You'll get bonuses to stealth, precise actions in combat(crits, parries), ranged weapons, and daggers, shortswords, and spears. But, like the Ranger in D&D, you'll also get some light nature magic, for things like entangling vines and the like.

Weirdly enough, my favorite builds are always the bland kind. in Dungeons and Dragons, I always make a fighter and base everything around his character and backstory. My favorite ongoing one is when I became a father and I made a character who is also a single father that is just trying to make gold to send home to his daughter and his parents to raise her.

I get really choked up in my play.

If there's no personality in my character, I'll probably just try to add magic in just to add flavor because sometimes gameplay can be important when character isn't good enough. I love playing Mass Effect since Shepherd can be a personality that you shape.
You get summon bear as well

Sneak crits, invisibility, one handed weapons specialization for ranger (spears, one handed swords, daggers) ranged specialization bows and guns that type of thing are in that skill tree

No actual stealing, it isnt a pick up everything sim kind of game.

for one handed weapons you can dual wield, just warhammer/battle axe/claymore are heavy weapons

haven't gotten to play it yet, but what is it like? People keep referring to Skyrim but that doesn't sound like what it's like. Any similar games compared to it? Is it open world? Is it like Mass Effect in that regard? You can't pick everything up but it's still an open world RPG.
I would compare it more to something like kotor world setup yeah, the combat is just easy to compare to skyrim but more action focused with ability use etc, honestly the combat reminds me more of the first bioshock than anything and I couldnt really put my finger on why

fights also feel much more like encounters, where you try to figure your way through each one instead of just whacking everything mindlessly but I havent played a ton and a lot of that was looking through and reading everything so I knew how it worked

The core of combat, at least on the higher difficulties, seems to be in layering CC abilities. So that's why casters are commonly used.

In a one on one scenario you mostly just need to worry about using charged attacks to break blocks and utilizing CC before dropping a high damage move on an enemy. You'll also want to use your AI buddy to draw aggro for you when possible; Kai is built as a tank for that purpose.

Ugh, I want to play it more and more. Someone, in a negative way, told me it was a lore dump and I told them that I'm grateful because now I want to play it even more.

Yeah Gameranx used that in their review as a negative but I don't really get it

I mean, these days you could just watch a 30 minute Youtube primer on the setting of Eora if it was really that much of a big deal. But Avowed should be structured in a way where that isn't necessary. Context will let you figure most things out as you go.

My character is a little squishy, but I found even on normal you can get knocked into second wind surprisingly easy if you arent careful.

I was definitely playing like a coward and depending on block too much have to get better at dodging. My dude isnt built to eat the stamina loss from blocking repeated attacks and then strike back

Yeah, light armor isn't really armor... If you bulk out in heavier armor, with a rank in the armor skill that reduces the stamina penalty, you'll be able to mix it up with enemies a lot more. That can be layered with the wizard spell that reduces incoming damage. There's also a party-wide healing ability you can unlock early on which can be spammed as needed(it'll also revive downed AI teammates).

If kcd2 wasn't out I'd be playing Avowed but instead Avowed needs to wait.
