there's a setting on my phone to disable mobile data. maybe you hit that?
edit: on the pull-down settings menu thing, it's the icon with a down arrow on the left and an up arrow on the right.
But if I put that same SIM card into another phone I can use data.

^^Hmm interesting. I have "Use LTEE data networks for calls whenever possible" ticked, but that wording suggests it will fall back to non data if it needs to.
I had a S21 ultra and I can put the sim in that phone and it works ok. I did get this new one refurbed so maybe I got a random dud that is locked or something? I dunno, its had a couple weird things about it so far.

If you're disconnected from wifi can you still call and text? You may want to look into the hidden menus via the phone dialer to find out exactly what your phone supports.
