Heat your grill to 400

Melt as much butter with your chopped garlic as you want.

pour it on your corn as you wrap it in tin foil

Cook for ten minutes on each side.

Grate Parmesan and/or feta cheese on a plate

When corn is finished, take it out of the foil, brush with mayo, and roll it in the cheese until evenly coated

Sprinkle with paprika

Gnaw

No chilli lime seasoning or Mexican mayonnaise?

I literally bought one out of a trunk from somebody in a compare foods parking lot. It's kind of cool because that's the culture in Mexico is it's all right to sell stuff in parking lots. So when it comes to the Mexican grocery store there's people selling trinkets too.

The pupusas were delicious as well

Really? I've never seen people sell stuff in parking lots. That made me think it was illegal or that most business owners call the law enforcement. The most I've ever seen is charity or girl scout cookies

Maybe just a difference of state

Eh, people like to have their own interpretations and cater to their likes. I have no issue with that really. I do it on some things too. But on stuff like this I like to stay fairly traditional.

It absolutely could be. I live in Alaska, and while its not the capital or the biggest city, its not like its the middle of no where. They wouldn't really care if you did this out here. The latter of your post would probably be an issue tho, depends on the store

It's generally allowed, but you need a license in many places as well as permission from the owner of the lot.

Ever have cotija cheese? It'll change your world, man. At the very least be adventurous and try that out next elote session.

I agree with others on seasoning though. Adobo is a good stock seasoning salt for Spanish recipes that I enjoy, although it's high on the sodium ala Lawry's or something.

There's no problem with doing it different. Food is food and making variations on existing recipes is how cuisine evolves. I guess I was just confused by calling it elote

I kind of have a sixth sense when it comes to food vendors/restaurants. I cant describe what clues me in, but Ive never been wrong in 31 years. Hole in the walls especially
