Was there any explanation in the Zelda games (Ive only played lttp and oot and mm) as to why this was needed? Wouldnt it have been better to just be one piece?

Its not like link had to collect each piece as part of the gameplay, they all just appeared at the end and it was like hey beat the final boss you were gonna kill anyway and you get the all these pieces all at once

Now, the games themselves were amazing and still goated but this part was weird imo

Because the entire point is how the power gets split between three people, at least in OoT.

Basic idea is that the Triforce grants you essentially ultimate power when assembled. To prevent abuse, it was made so that the gods themselves can't use it, which is why Hylia reincarnated as the mortal Zelda, & it's split apart so that it isn't so easy to get; basically, just think of it as the Dragon Balls or the Chaos Emeralds: you need to collect them to get the real power, & having them not only divided, but bound to protectors (Ganondorf stole his piece) provides some safeguards.
Remember kids, it's only an RPG until someone gets hit with a meteor; Then it's a JRPG!

My only real issue with the dynamic is that only the triforce of power generally seems offer any sort of ability and or power to its wielder in most incarnations. Meanwhile the other do offer fuck all.

And when fully assembled grants its wielder a single wish and....not much else, which is kind of underwhelming tbh. Toon Ganon from the WW is one of the few ganons to my knowledge to collect all the pieces but still gets his ass kicked the same as every other.

From the beginning, it had separate triangles for Power and Wisdom, although Courage didn't exist until AoL. In the original game, Ganon stole Power and shattered Wisdom, and Link had to reunite Wisdom so it could be used against him. In AoL, Link has to find Courage in order to save Zelda from a cursed sleep, and the other two parts aren't present.

OoT added the whole destined bearers thing, where anyone trying to claim the triforce could only do so if their heart was in balance. Otherwise, they would keep whatever they believed in most strongly, and the other two pieces would go to their respective destined bearers. OoT doesn't explicitly say that Ganon(dorf) is the destined wielder of Power, just that he stole it by grabbing the Triforce first, but no mention of any other destined bearer of Power has ever come up, and probably never will.

In the Adult Timeline (Wind Waker), Ganon still has the Triforce of Power, but the Triforce is united and disappears at the end of the game. In the Downfall Timeline, Ganon has the whole Triforce, but Zelda seals him away again despite this until he is freed during ALttP.

So if there was a destined bearer of the Triforce of Power before Ganondorf grabbed it in OoT, they would have to come up in the Child Timeline. (It is worth noting that in TP, the only Child Timeline game since MM, no mention of any of the main trio having part of the Triforce is ever made.)

There is one game where you actually do collect all three parts of the Triforce and assemble the whole thing, and that game is Skyward Sword .

he gets his ass kicked because the triforce is stolen from him before he ever gets to use it. he gets distracted after forming it. its power is only used to reflood hyrule, ganon never actually uses it.
