Why do so many of these games block you from things behind dumb looting and crafting walls? Gotta build this to go here to build this to upgrade this?

I can only think of BotW that let you go anywhere.

Are you also excluding more Metroid-style ones where the progression is tied to getting the upgrades/skills/items to continue?

Plenty, yes.

Elden Ring, Breath of the Wild, Red Dead Redemption 2, Ghost of Tsushima, Final Fantasy 7 Rebirth, The Witcher 3, etc...

Some of those games have crafting in them, but they're hardly blocking you from anything. You never have to craft a single thing in Elden Ring if you don't want to.

You can pretty much go wherever you want in the games I mentioned, story progression is the only "roadblock" at times. Crafting is never going to stop you from going somewhere though.

You need a story focused open world game. Like Cyberpunk 2077.

Oh yeah, Elden Ring is a good one. You can go anywhere, very light weapon upgrade system. I loved exploring in that game.

FF7R is kind of ok, but it is locked out by story moments. Id say it doesnt have as many interesting secrets or areas as Elden Ring. It does look great and has a lot of stuff in it though, all of which adds to the lore of FF7
