"traditional" Italian lasagna apparently uses Bchamel sauce, not ricotta, but i don't really care. ricotta is the way my family has always done it. my mother is Italian, and the recipe we use was passed down by my great grandmother who lived in Italy, so as far as i'm concerned, it's authentic enough. and i really don't get why a French sauce is considered more traditionally Italian than an Italian cheese anyway.
