Italian pretension towards food are tied into the fact they are still a young nation made up of a bunch of ancient kingdoms held together by chewing gum. Italy stops at the border of their town or city, so you get crazy takes like a Roman telling you that you can't find real pizza in Naples. Once you realize that what they really mean is that you can't find real Italian food outside of their town, everything begins to click.
