Really? It was one of the better things to meal prep in my experience. Once cooled, I'd divide it into portions, wrap those in foil and freeze them. When I wanted pasta I'd move a portion to the fridge, let it thaw overnight then warm it in the microwave the rest of the way. The difference in quality between that and fresh pasta is pretty small to me.
