I'm talking physical arcade cabinets

Physical arcade cabinets have a hard time competing with games you can play at home for no incremental cost, at least as far as I'm concerned. I can appreciate the novelty of games that require specialized arcade hardware, but between the practical considerations of having to leave my house to play them and the cost per attempt in a genre that demands many, many attempts, home games have a distinct advantage.

Oh no doubt that's the tradeoff. You can have a million different rhythm games at home, but they're all just controller or keyboard/mouse. But with a cabinet, you can have all kinds of different actions and mechanisms for play. But like you say, that requires leaving and generally additional payment. And not to mention waiting in the event the cabinets are occupied.

And I use a drawing tablet for Osu (or did, but I haven't played in several years). I've also got a dance mat that came with Mario DDR back on the GC. There are quite a few home rhythm game peripherals that go beyond just a keyboard, controller, and mouse (touch screen is also worth noting). They usually come with an additional cost, but it's generally significantly less than paying to use an arcade cabinet would cost.

Arcades are just where you end up finding larger, more robust, and/or more complex input systems, which don't necessarily lend themselves to home use. Even then, though, if a game is popular enough in arcades, it's not unheard of to see it adapted to home use, as happened with Beatmania and DDR once it was confirmed that there was enough of an audience that producing the peripherals wouldn't end up being a waste.

I really liked Muse Dash. I don't really play rhythm games but that one was simple enough to pick up and play and complex enough to get good at. The developers have been really generous with content updates, too.
I still stick with Bemani games. MaiMai is fine. I prefer Chunithm for the SEGA rhythm games though.
