I've often wondered if the reason the last two books are taking so long is that GRRM saw how badly the end of the series was received and decided to redo the books ending.
Like, I couldn't stand the culmination of Jamie & Dany's story arcs. Jamie, for nearly three books, has been coming to the realization that his family doesn't care about him the way he cares about them, and beginning to focus on what will give him a chance at having a purpose.
And for Dany to go 'mad queen' would just be cliched, because it's such a big worry for her. Martin is all about subverting or twisting fantasy concepts, so IMO it would make more sense that she doesn't go nuts.
ASoIaF was originally conceived as a trilogy and the series as it currently exists isn't even on the second book of that trilogy (Dany invading Westeros).
It's not just a matter of "people didn't like the ending I had", though I'm sure that's part of it. He has completely lost control of the story and given up. We were waiting on Winds before the tv show even came out.
although, I had my problems with Dance as well. GRRM definitely just abandoned main characters in the middle of the book and just never went back to them..imagine writing a book over a 1000 pages and just ignoring your characters for more than half of it
