Monument Valley 1 & 2 are fun puzzle games (paid)

Retro Bowl is a really fun Tecmo Bowl style game. It's free but if you pay $1 you can unlock some quality of life features that are well worth imho

Oh and the Kingdom Rush games are really good tower defense games. Those are paid apps too

Dungeon Maker's a fun roguelike pseudo-deckbuilder where you build up a dungeon, laying traps and monsters around so that invaders will be defeated before they can take own your dungeon boss. It has two one-time purchases but it's pretty cheap

Candies n Curses is a really fun arcade style action/platformer with roguelite elements. The whole game is free aside from some cosmetic microtransactions.

Bloons TD 5 and/or 6. While there are modes in either that require wifi or some other kind of internet, most of the modes can be played offline

star realms is a real fun card game got alot of simgle player campaigns on the app, only the base one is free though

Slayaway Camp. While a paid game on PC, mobile is free to play with ads, which are removed with a single cosmetic purchase. I admit I haven't played much of this myself, but did play Friday the 13th: Killer Puzzle, which was basically a reskin with some new levels.
